Honey is a sweet substance bees make from flowers' nectar. It's a 100% natural product.
It is made up of fructose, glucose and water. That's the reason why it's less calorific than sugar and the organism assimilates it more quickly.
While harvested, honey is liquid and its solidification speed will depend on its origins. This texture change is natural and honey will get back its liquid aspect if you warm it up in a bain-marie at low temperature.

A wide variety of honeys exists: they have different colors, textures and flavors.
Since the Greek age, Corsica has always been known for the quality of its honey. That certainly is one of the reasons why today it is one of the few regions that has the official quality guarantee. There are as many types of honey as the number of existing landscapes and seasons, which constitute a wide variety of flowering.

 

 

It's important to remark that honey comes from a black bee, called apis mellifica corsica, which you only find in Corsica. It's been a protected species since the 1982 law that bans the introduction of any kind of bee in the island.

IN SPRING

 

 


THE SPRING HONEY
is made of asphodels and leguminous plants and is harvested in the depths of the valley. It is gold-colored, delicately flavored and sweet, and it has a fine crystallization.

 

 

THE MAQUIS SPRING HONEY is made of arborescent heather, broom, germander. It is harvested from the coasts to the mountains. It is amber-colored, perfumed and has a quick crystallization.

 

 

THE MAQUIS SPRING MIELLAT is darker and has a stronger taste than honey.

 

 

THE CLEMENTINE TREE'S SPRING is made of citrus fruits. It's pale yellow-colored and delicately fruity. It has a fine and slow crystallization. 

 

 

IN SUMMER

 

 


THE MAQUIS SUMMER HONEY is made of anthyllis, Corsican thyme, broom and is harvested in the mountains. It's very sweet, pale and very aromatic..

 

 

LE CHESTNUT'S HONEY is made of chestnut trees, as its name says. It's harvested in the mountains. It is amber-colored and has a strong taste. Its taste will get lighter if it's mixed with some Corsican thyme, anthyllis or broom.

 

 

IN AUTUMN

 

 


THE MAQUIS AUTUMN HONEY
is made of arbutus and is harvested from the coasts to the mountains. It's amber-colored, pale, bitter and has a long lasting taste.

 

 

 

 

 

Each person has its own tastes. It's up to you to choose the flavors that fit you the best!
Honey is part of the Corsican culture and it has a strong identity, just as the ground where it's produced. That's why you can find it in many traditional Corsican recipes, both sugared and salted ones.
 
For that reason many Corsican products, which have a strong identity, have honey as an ingredient.
